Galactomannans Definition and Digestion

Galactomannans are a soluble fiber, indigestible polysaccharides (complex carbohydrates), composed of galactose and mannose. They are extracted from various plants. Due to their viscosity they are added to certain foods as gelling agents. Some of them may lower blood cholesterol level and reduce glucose spikes after meals.
